Evaporative cooling is due to the porosity of the ceramic, which exudes water that evaporates takes the latent heat of vaporization of water inside, getting it to cool. The lowest temperature at which air can reach the evaporation of water within it, or wet bulb temperature, determine the theoretical minimum temperature which can reach the water evaporation, thus, for a jug is efficient, requires sweat and water found in a dry environment.
